Pistachio Muffins! with avocado and garbanzo bean flour

Because there's only so many almonds a girl can take.

DRY:
1 cup pistachios, pulsed into coarse flour (save some whole pieces for topping)
3/4 cup garbanzo bean flour
1 tsp baking soda
1 T baking powder

WET:
1 whole very ripe avocado
2 mashed very ripe bananas
1/4 cup pure maple syrup or honey
2 tsp vanilla
2 eggs

Mix dry in one bowl. Mix wet in another bowl. Incorporate dry into wet and mix in dark chocolate chips if desired (Little Evolve Well made me do it). Top with whole pistachio pieces to garnish. Fill into muffin cups and bake 15-20 mins at 350F.
